Ingredients
handful of fresh coriander
2 cloves garlic, crushed
125 g walnuts, chopped
125 ml olive oil
coarse salt to taste
750 g salmon trout, filleted and deboned
olive oil
Method:
Make pesto by grinding the coriander, garlic and walnuts together with a mortar and pestle.
Slowly add the olive oil and keep grinding until it forms a thick paste. Add coarse salt to taste.
